Zoodles with Garlic, Tomatoes & Prawns
A great low-carb, low-calorie, high nutrition & high-flavour recipe. This has to be one of the most simple, delicious and low-cal recipes out there! Swapping out pasta for zoodles is one of our favourite swaps. It boosts your vegetable intake, whilst providing that pasta or noodle feel and crunch. These zoodles are the perfect base to this gorgeously flavour-filled Garlic Prawns and Tomato mix. Enjoy!
Ingredients
- 600 grams zucchini spiralised into zoodles
- 350 grams tomatoes halved
- 4 cloves garlic crushed
- 50 grams brown onion diced
- 1 tbsp olive oil
- 350 grams prawns tails on
- 40 grams parmesan (optional)
- salt and pepper to taste
Instructions
- Heat a large frying pan over a medium high heat, add the olive oil, garlic and onion and sauté until golden.4 cloves garlic, 1 tbsp olive oil, 50 grams brown onion
- Add the tomatoes, salt and pepper and cook for 5 minutes until the tomato starts to break down.350 grams tomatoes, salt and pepper
- Add in the prawns and cook until they’re pink and cooked through. Toss through the zucchini pasta, season again and enjoy.350 grams prawns, 600 grams zucchini
- Feel free to top with some chili flakes, parmesan, basil leaves or a big squeeze of lemon juice.40 grams parmesan
