A fresh and flavourful twist on the classic. Perfect for a quick lunch, a light dinner, or even a crowd-pleasing entrée, this dish is simple to make and packed with bold, fresh flavours.
Place a large non stick frying pan over high heat, add the bacon and cook for 2-3 minutes until the fat starts to render out.
Add in the sourdough cubes and continue to cook the bacon with the bread until the sourdough starts to brown. Remove the sourdough and add to a large salad bowl (keep the bacon in the pan).
Add the prawns to the bacon until cooked through, remove from the heat and set aside.
In a small bowl stir together the mayonnaise and the yoghurt.
Add the cos lettuce, prawns and bacon to the salad bowl, stir through the dressing (yoghurt and mayo) and stir until evenly coated.
Top with grated parmesan and a generous helping of black pepper.
