
Caesar Salad With Prawns
A fresh and flavourful twist on the classic. Perfect for a quick lunch, a light dinner, or even a crowd-pleasing entrée, this dish is simple to make and packed with bold, fresh flavours.
Ingredients
- 100 g cos lettuce leaves shredded
- 30 g stale sourdough diced
- 120 g green king prawns tail on
- 20 g bacon diced
- 10 g mayonnaise
- 15 ml natural yoghurt
- 15 g parmesan cheese grated
- black pepper
Instructions
- Place a large non stick frying pan over high heat, add the bacon and cook for 2-3 minutes until the fat starts to render out.
- Add in the sourdough cubes and continue to cook the bacon with the bread until the sourdough starts to brown. Remove the sourdough and add to a large salad bowl (keep the bacon in the pan).
- Add the prawns to the bacon until cooked through, remove from the heat and set aside.
- In a small bowl stir together the mayonnaise and the yoghurt.
- Add the cos lettuce, prawns and bacon to the salad bowl, stir through the dressing (yoghurt and mayo) and stir until evenly coated.
- Top with grated parmesan and a generous helping of black pepper.
