Chicken & Pomegranate Bowl

Ingredients
  

  • 100 g cooked quinoa
  • 200 g chicken breast
  • 150 g broccoli florets
  • 80 g carrot grated
  • 40 g alfalfa sprouts
  • 60 g pomegranate seeds
  • 120 g sliced avocado
  • 10 ml tamari
  • 5 ml olive oil
  • 1 crushed garlic clove
  • juice of 1 lemon
  • 10 g toasted sesame seeds

Instructions
 

  • Stir fry the chicken breast in a little spray oil, when nearly cooked through add the tamari and broccoli. Add a little water to the pan and cook until the broccoli is cooked.
  • When the chicken has cooled slice it thinly.
  • To build your bowls, place the quinoa at the bottom of each bowl, add the carrot, sprouts, avocado, broccoli and chicken. Top with the pomegranate seeds.
  • Combine the olive oil, garlic, mustard and lemon to make the dressing. Season to taste, adjust if necessary.
  • Drizzle the dressing over the bowl and sprinkle with sesame seeds to finish.
