Chilli Nacho Bowls

Ingredients
  

  • 500 g lean beef mince
  • 400 g red kidney beans drained & rinsed
  • 400 g tin chopped tomatoes
  • 3 tbsp tomato paste
  • 100 g brown onion diced
  • 2 cloves garlic crushed
  • 1 tsp cumin powder
  • 1 tsp paprika
  • salt and pepper
  • 600 g cauliflower rice
  • 120 g corn chips
  • 30 g coriander

Instructions
 

  • Sauté the onion and garlic in a dash of oil until golden, add the cumin and paprika and cook for a further minute.
  • Add the beef mince and break apart with a spatula, cook for 10 minutes until the beef mince is nearly cooked.
  • Add the tomato paste and canned tomato. Season with salt and pepper and leave to simmer for 20 minutes. Add some water if needed.
  • Stir through the kidney beans.
  • Steam or microwave the cauliflower rice.
  • Serve the chili on top of the rice with corn chips on the side, garnish with coriander.
