Chilli Nacho Bowls
A healthy take on traditional nachos!

- 500 g lean beef mince
- 400 g red kidney beans drained & rinsed
- 400 g tin chopped tomatoes
- 3 tbsp tomato paste
- 100 g brown onion diced
- 2 cloves garlic crushed
- 1 tsp cumin powder
- 1 tsp paprika
- salt and pepper
- 600 g cauliflower rice
- 120 g corn chips
- 30 g coriander
Sauté the onion and garlic in a dash of oil until golden, add the cumin and paprika and cook for a further minute.
Add the beef mince and break apart with a spatula, cook for 10 minutes until the beef mince is nearly cooked.
Add the tomato paste and canned tomato. Season with salt and pepper and leave to simmer for 20 minutes. Add some water if needed.
Stir through the kidney beans.
Steam or microwave the cauliflower rice.
Serve the chili on top of the rice with corn chips on the side, garnish with coriander.
