
Chilli Nacho Bowls
A healthy take on traditional nachos!
Ingredients
- 500 g lean beef mince
- 400 g red kidney beans drained & rinsed
- 400 g tin chopped tomatoes
- 3 tbsp tomato paste
- 100 g brown onion diced
- 2 cloves garlic crushed
- 1 tsp cumin powder
- 1 tsp paprika
- salt and pepper
- 600 g cauliflower rice
- 120 g corn chips
- 30 g coriander
Instructions
- Sauté the onion and garlic in a dash of oil until golden, add the cumin and paprika and cook for a further minute.
- Add the beef mince and break apart with a spatula, cook for 10 minutes until the beef mince is nearly cooked.
- Add the tomato paste and canned tomato. Season with salt and pepper and leave to simmer for 20 minutes. Add some water if needed.
- Stir through the kidney beans.
- Steam or microwave the cauliflower rice.
- Serve the chili on top of the rice with corn chips on the side, garnish with coriander.
