Lemon & Coconut Protein Balls

Need a sweet afternoon treat to get you through to dinner? Try these absolutely delicious and zesty Lemon and Coconut Protein Balls. These protein balls contain plenty of healthy fats, 5g of protein per ball and a whole lot of flavour!

  • Place the nuts into a high-speed blender or processor and blend on high until they form a fine crumb.
  • Add in the protein powder and lemon rind and blend again.
  • Keep the blender/processor on and slowly add in the pitted dates. Be patient and keep blending until they fully break down and a dough starts to form. You may need to add another date or two.
  • Roll into small 35g balls and then roll in coconut to finish.
  • Repeat with the remaining mixture and balls.

Notes

These will keep for a month in the fridge. This recipe makes 15 balls, at 139 calories per ball.
