Lemon & Coconut Protein Balls
Ingredients
- 225 g almonds or cashews
- 225 g Medjool dates pitted
- 2 Lemon
- 50 g desiccated coconut
- 30 g SuperFastDiet Super Smoothie Vanilla Protein Powder
Instructions
- Place the nuts into a high-speed blender or processor and blend on high until they form a fine crumb.
- Add in the protein powder and lemon rind and blend again.
- Keep the blender/processor on and slowly add in the pitted dates. Be patient and keep blending until they fully break down and a dough starts to form. You may need to add another date or two.
- Roll into small 35g balls and then roll in coconut to finish.
- Repeat with the remaining mixture and balls.
