This overnight oats recipe is the perfect way to get more oats into your diet. Oats are one of our favourite SuperFoods. The reason being that they’re high in both soluble and insoluble fibre, which means they’re great for your gut health.Low in sodium, good source of fibre
1/2cupapple juice or freshly squeezed orange juice
1tbspdried currants or dried raisins
a sprinkling mixed spice
1tbspslivered almonds
1/4cupregular plain yoghurt
1smallgranny smith apple coarsely grated, skin on
a generous squeeze of lemon
1/2cupfresh raspberries
Instructions
Combine rolled oats, apple juice, honey, currants, almonds and mixed spice in a jar or bowl. Stir together to combine. Chill overnight (or for at least two hours).Next morning – stir in yoghurt, grated apple and lemon juice.Serve topped with raspberries.
