Swapping out pasta for zoodles is one of our favourite swaps. It boosts your vegetable intake, whilst providing that pasta or noodle feel and crunch. These zoodles are the perfect base to this gorgeously flavour-filled Garlic Prawns and Tomato mix. Enjoy!
Add the tomatoes, salt and pepper and cook for 5 minutes until the tomato starts to break down.
350 grams tomatoes, salt and pepper
Add in the prawns and cook until they’re pink and cooked through. Toss through the zucchini pasta, season again and enjoy.
350 grams prawns, 600 grams zucchini
Feel free to top with some chili flakes, parmesan, basil leaves or a big squeeze of lemon juice.
