This has to be one of the most simple, delicious and low-cal recipes out there! Swapping out pasta for zoodles is one of our favourite swaps. It boosts your vegetable intake, whilst providing that pasta or noodle feel and crunch. These zoodles are the perfect base to this gorgeously flavour-filled Garlic Prawns and Tomato mix. Enjoy!
Ingredients
600g zucchini, spiralised into zoodles
350g cherry tomato, halved
4 cloves garlic, crushed
50g brown onion, diced
1 tbsp olive oil
350g prawns, tail on
Salt and pepper
40g parmesan – optional
Method
Heat a large frying pan over a medium-high heat, add the olive oil, garlic and onion and sauté until golden.
Add the tomatoes, salt and pepper and cook for 5 minutes until the tomato starts to break down.
Add in the prawns and cook until they are pink and cooked through.
Toss through the zucchini pasta, season again and enjoy.
Feel free to top with some chili flakes, parmesan, basil leaves or a big squeeze of lemon juice.
