Mashed Cauliflower
1: Cut up your cauliflower into florets and boil for 12 – 15 minutes
2: Drain and pat with a paper towel – the drier the cauliflower the better the texture will be
3: Stir in butter, garlic, Greek yoghurt or milk and Parmesan cheese to taste
4: Blend with a stick blender
5: Smash that mash!
A whole cup only contains 100 calories which, when coupled with instant gravy at around 25 cals per serve, makes for one delish side dish!
Easy-Cheesy Cauliflower Toast
1: Place raw cauliflower in a food processor
2:Transfer to a bowl and microwave for 3 minutes
3: Bundle in a clean towel to wring out excess moisture (important!).
4: Now you’re ready to blend with 1 cup grated cheddar cheese, salt and pepper and an egg.
5: Divide into 4 x 1 cm thick squares and bake until golden! Mmm-mmm.
Cauliflower isn’t just a great low cal and nutritious substitute for potato, you can have it for breakfast in toasty cheesy form!
