Ingredients
  

  • 100 g cos lettuce leaves shredded
  • 30 g stale sourdough diced
  • 120 g green king prawns tail on
  • 20 g bacon diced
  • 10 g mayonnaise
  • 15 ml natural yoghurt
  • 15 g parmesan cheese grated
  • black pepper

Instructions
 

  • Place a large non stick frying pan over high heat, add the bacon and cook for 2-3 minutes until the fat starts to render out.
  • Add in the sourdough cubes and continue to cook the bacon with the bread until the sourdough starts to brown. Remove the sourdough and add to a large salad bowl (keep the bacon in the pan).
  • Add the prawns to the bacon until cooked through, remove from the heat and set aside.
  • In a small bowl stir together the mayonnaise and the yoghurt.
  • Add the cos lettuce, prawns and bacon to the salad bowl, stir through the dressing (yoghurt and mayo) and stir until evenly coated.
  • Top with grated parmesan and a generous helping of black pepper.
