Plus, we’ve made the recipe super-dooper simple, which means you – yes, even you sans coffee first thing in the morning – can make it for brekkie, easy peasy. On top of that, did you know eggs are only 78 calories each? Win! That makes them a great, nutritious, low-calorie food that’s perfect for breakfast.

Eggs are basically a vitamin pill in food form. They contain levels of most key nutrients, including B vitamins, iron and vitamin A, are a rich source of protein with antioxidant properties, and may increase your ‘good’ HDL cholesterol levels which make them great for your heart too!

Ingredients

1 small avocado halved (90g)
2 egg whites (from 2 large regular eggs – each 59g with shell)
1 tablespoon chopped fresh chives
30g baby spinach
salt & pepper
olive oil spray

Method

Remove the seed from the avocado. Whisk together the egg whites, chives and spinach. Season with salt and pepper.

Spray a small frying pan with oil over a medium heat. Pour in eggs, push the uncooked egg into the center of the pan until the egg is set.
