Low calorie eggs recipe
Ingredients
1 small avocado halved (90g)
2 egg whites (from 2 large regular eggs – each 59g with shell)
1 tablespoon chopped fresh chives
30g baby spinach
salt & pepper
olive oil spray
Method
Remove the seed from the avocado. Whisk together the egg whites, chives and spinach. Season with salt and pepper.
Spray a small frying pan with oil over a medium heat. Pour in eggs, push the uncooked egg into the center of the pan until the egg is set.
