Check out six of our favourite easy and delicious ways to eat more vegetables at every meal.
Carb Swaps
We don’t doubt you have heard of cauliflower rice or zoodles recently, as they have taken over the health world as a really simple and low-calorie carbohydrate alternative for a whole range of meals. Family favourite stir-frys and pasta that are usually made with a rice, noodle or pasta base can be easily swapped out for cauliflower rice or vegetable noodles such as carrot, zucchini or sweet potato. These easily boost your vegetable intake, whilst also significantly reducing your carbohydrate and calorie intake. Sweet potato toast was even a trend for a minute!
Cauliflower rice and zoodles are super easy to make yourself at home. All you need is a food processor for the rice and a spiraliser for the noodles! To save you time and effort, supermarkets also sell vegetable-based rice or vegetable noodles pre-made in the fresh food section, as well as frozen in the freezer aisle. We love a time saver!
Leftover vegetable ‘chuck-together’
We absolutely love ‘chuck-together’ vegetable meals that easily boost your intake for the day without the effort. They are so easy and versatile too. What are our favourites?
We’re thinking frittata’s, like this vegetable frittata from our recipe library, colourful stir-frys, fragrant curries or easy, Wintery stews and soups. You can get super creative with these kinds of meals. They require little thinking effort and time plus plenty of money and waste saving. Think about that big bag of spinach and those carrots that have been sitting in your fridge for a week. Use them up with one of these meals for a low-cost, low-calorie, and high volume delicious meal.
‘Sneak-it-in’ meals
If you are a parent, you have most likely snuck vegetables into a multitude of your kids’ favourite meals. Some of the classic go-to’s include spaghetti bolognese, shepherd’s pie, lasagne, meatballs, burgers and tacos. Anyone else salivating at the thought of these deliciously rich meals?
You don’t have to just sneak veggies in for your fussy kids! Sneaking vegetables into any meal you can is such an awesome way to easily boost your nutrition and vegetable intake. So next time you are whipping up a Mexican Bowl or Burgers, grate in some zucchini and carrot too. Your body will thank you.
Sweet treats
Only until quite recently, the idea of adding vegetables into desserts seemed completely ludicrous. It was just two things that didn’t quite make sense. The rule goes, ‘you can eat your dessert once you’ve finished your vegetables!’, not enjoy your vegetables and dessert together. But trust us… it works.
Some of our favourite options include:
- Mousse → made with avocado
- Cookies → made with carrot
- Brownies → made with sweet potato, avocado or with added zucchini
Drink it up
Similarly, to desserts, you might be wondering, ‘but aren’t smoothies sweet? How do you add vegetables to a chocolate-y banana smoothie?’ Easy! There are several vegetables such as spinach and zucchini that have recently become a staple in many morning kickstart smoothies. As mentioned, zucchini is a great option for its very bland taste, but high nutritional benefit. This green addition, especially when popped in frozen, can really add a lovely creaminess to your smoothies too.
Snack time
It is no secret that we are pretty snack obsessed here at SuperFastDiet, especially easy and delicious low-calorie options. When you think of ‘chips’, maybe potato chips come to mind first. But, did you know you could make equally as delicious, lower carb vegetable snacks too? Zucchini and carrot can easily be chopped up like matchsticks or shaved thinly to make potato chip replicas.
Roasted or air fried vegetables like capsicum, pumpkin or zucchini covered with spices and herbs make an absolutely delicious snack too!
Dips are such a delicious and quick snack to enjoy on the run.
