Looking for a low calorie soup recipe that’s swish, delish and nutrish? We’ve got one here that you’ll love. Most low calorie soup recipes are bland and boring, but this one features tomatoes, chorizo, smoked paprika and protein-packed butter beans. And it’s all under 250 calories per serve. Win!
Leigh Austin Ritter’s Low Calorie Tomato & Butter Bean Soup Recipe
30g finely diced Chorizo
1 finely diced Spanish onion
1/2 teaspoon minced garlic
1 x 400g tin diced tomatoes
1 x 400g tin drained and rinsed butter beans
1 tablespoon tomato paste
1/2 teaspoon smoked paprika
Salt and pepper to taste
In a saucepan over medium heat fry the chorizo for a few minutes. Next, combine onion and garlic and cook until onion is translucent. Then add beans, tomatoes, paprika, salt and pepper. Finally, fill up tomato tin with water and add to pan. Simmer for further 10 – 15 minutes.
Serve with sprinkle of parsley.
Serves 2 at 250 calories per single serve. And that’s the perfect low calorie soup recipe for those winter days. Easy peasy!
