Looking for a low calorie soup recipe that’s swish, delish and nutrish? We’ve got one here that you’ll love. Most low calorie soup recipes are bland and boring, but this one features tomatoes, chorizo, smoked paprika and protein-packed butter beans. And it’s all under 250 calories per serve. Win!
Tomato & Butter Bean Soup
Ingredients
- 30 grams chorizo finely diced
- 1 spanish onion finely diced
- 1/2 tsp minced garlic
- 400 grams tomato tinned, diced
- 400 grams butterbeans tinned, drained
- 1 tbsp tomato paste
- 1/2 tsp smoked paprika
- 400 ml water fill tomato tin
- salt & pepper to taste
- chopped parsley small handful
Instructions
- In a saucepan over medium heat fry the chorizo for a few minutes
- Add onion and garlic and cook until onion is translucent
- Add beans, tomatoes, paprika, salt and pepper. Add water (fill up tomato tin) and add to pan
- Simmer for further 10 – 15 minutes
- Serve with sprinkle of parsley
